Ingredients

  • 1 rack of lamb (8 ribs)

  • 50 g unsalted pistachios

  • 2 garlic cloves

  • 1 tablespoon whole-grain mustard

  • 1 tablespoon olive oil

  • Salt and pepper


Preparation

  • Preheat the oven to 180°C (350°F).

  • Mix the chopped pistachios, garlic, mustard, olive oil, salt and pepper.

  • Brush the rack of lamb with the mixture and roast in the oven for 25 to 30 minutes for a medium-rare finish.
